Food processors offered educational opportunities at two locations

Two schools will soon be offered by North Carolina State University and other partners for those processing products to be sold commercially as listed below:

• Acidified Foods — GMP School for Pickle Manufacturers: April 29-May 1 (registration deadline - April 22); DoubleTree by Hilton Hotel, Raleigh - Brownstone, 1707 Hillsborough St., Raleigh.

•Acidified Foods Processing and Packaging — Better Process Control School: For North Carolina entrepreneurs packaging in glass and plastic containers; Feb. 27-March 1 (registration deadline - Feb. 20); Holiday Inn Asheville, Biltmore West, 435 Smokey Park Highway, Asheville.

This school is intended for and directed at the level of operating supervisors of acidified foods processing and packaging systems in acidified food establishments. The course includes instruction on acidified foods. It will qualify commercial operators of plants producing acidified foods (fresh packed pickles, acidified peppers, pickled eggs, salsa, etc.) to meet the requirements of the umbrella GMP and the specific GMP for acidified foods (21 CFR Part 114).
